Nowadays, Valderiz owns over 100 hectares of vineyards with a Certificate of Ecologic Viticulture. 90 Ha. were planted by Tomás Esteban, and 10 Ha. that he had kept from his father.
The vineyard is divided in 45 small parcels, all of them located in Roa de Duero, where there is an ample variety of soils: pebbles, clay and limestone are its main components. The vines are mainly formulated in gobelet, and later grafted onto older vineyards from after a massal selection.

CLIMATE
The Mediterranean climate (over 2.400 hours of sun), marked by a strong continentality, distinguished by long rigorous winters (-10ºC) and dry summers, with a great oscillation between day and night temperatures.
The pluviometry is medium-low, around 450 mm annual.

Primer material
The main concern for Tomás Esteban was to achieve excellent prime material. In order to do so, he developed a revolutionary pruning system and vegetation management called “pie de pato” (duck’s foot), that is applied to some of the vineyards.
This technique consists of creating a vertical gobelet, where its branches are set in a fork shape and the buds are left hanging at the ends. This way, the bunch of grapes is able to ripen evenly, as well as preventing disease.
Philosophy
The philosophy of organic working at the vineyard, where biodynamic agriculture techniques are applied, will be transferred to the field.
The winery is designed to be efficient at every level: water waste is minimized, and energetic self-sustainability is achieved thanks to the solar panels installed on the roof.
